Avocado Cream

Ingredients

3 ripe avocados

Juice of one large lemon

1/2 cup sugar

1 cup heavy whipping cream

1/4 cup finely ground almonds

1/4 cup white rum

Directions

1. Peel the avocados, removing pits from the center; chop into cubes (1/2-inch).

2. Place the avocado cubes into the blender jar, along with lemon juice, sugar, cream, almonds, and rum.

3. Mix all ingredients at high speed until you obtain a delicate light green mousse.

4. Pour into fruit cups and refrigerate for 1 hour before serving. Garnish with a lemon wedge
