CAJUN VEGGIE GRATIN

Hamilton Beach® Big Mouth® food processor

Prep Time:  25 Minutes
Cooking Time:  30 Minutes
Health Check Side Dish

3 medium zucchini, sliced using Hamilton Beach® Big Mouth® food processor
1 red onion, sliced using Hamilton Beach® Big Mouth® food processor
6 plum tomatoes sliced using Hamilton Beach® Big Mouth® food processor
1 ½ teaspoons (7½mL) extra virgin olive oil
1 ½ teaspoons (7½mL) Cajun seasoning
½ teaspoon (2½mL) salt
1 teaspoon (5mL) freshly ground pepper
Cooking spray

Topping
1 cup (237mL) breadcrumbs
½ cup (118mL) Parmesan cheese, chopped finely using Hamilton Beach® Big Mouth® food processor
½ teaspoon (2½mL) Cajun seasoning

  1. Heat oven to 425°F (218°C).
  2. Spray 8” x 8” (20cm x 20cm) pan with cooking spray.
  3. Heat oil in large sauté pan over medium heat. 
  4. Add sliced zucchini and onion, sauté for 3-4 minutes until they begin to soften. 
  5. Add sliced tomatoes, Cajun seasoning, salt and pepper to pan. 
  6. Sauté mixture, stirring gently, for 8-10 minutes until all vegetables are softened and heated through.  Place vegetable mixture in prepared pan.
  7. Combine breadcrumbs, Parmesan cheese and Cajun seasoning.  Spread evenly over top of vegetables.
  8. Bake for 15-20 minutes until topping is brown and crispy.
