1 lb. (454g) large raw shrimp, peeled, de-veined
2 teaspoons (10mL) extra virgin olive oil
Freshly ground pepper
3 oz. (85.0g) reduced-fat feta cheese, crumbled
2 tablespoons (30mL) fresh oregano leaves
1 15 oz. (444mL) can diced tomatoes
2 cups (474mL) brown basmati rice
- Preheat Hamilton Beach® Grill. Toss shrimp with olive oil and freshly ground pepper to taste.
- Cook brown basmati rice according to package directions, omitting the salt and fat. Keep warm.
- Process oregano and feta cheese in Hamilton Beach® Big Mouth® Food Processor until cheese is coarsely chopped and combined with oregano. Set aside.
- Place diced tomatoes in microwave safe bowl and heat on high for 1-2 minutes or until hot. Keep warm.
- Grill shrimp for 2-3 minutes until pink – do not overcook.
- To serve, top rice with diced tomatoes, grilled shrimp and feta and oregano mixture.
