GRILLED SHRIMP WITH HERBED FETA CHEESE
and
BROWN BASMATI RICE

1 lb. (454g) large raw shrimp, peeled, de-veined
2 teaspoons (10mL) extra virgin olive oil
Freshly ground pepper
3 oz. (85.0g) reduced-fat feta cheese, crumbled
2 tablespoons (30mL) fresh oregano leaves
1 15 oz. (444mL) can diced tomatoes
2 cups (474mL) brown basmati rice

  1. Preheat Hamilton Beach® Grill.  Toss shrimp with olive oil and freshly ground pepper to taste.
  2. Cook brown basmati rice according to package directions, omitting the salt and fat.  Keep warm.
  3. Process oregano and feta cheese in Hamilton Beach® Big Mouth® Food Processor until cheese is coarsely chopped and combined with oregano.  Set aside.
  4. Place diced tomatoes in microwave safe bowl and heat on high for 1-2 minutes or until hot.  Keep warm.
  5. Grill shrimp for 2-3 minutes until pink – do not overcook.
  6. To serve, top rice with diced tomatoes, grilled shrimp and feta and oregano mixture.
