Blue Cheese Shrimp

Yield: 6 servings

Ingredients

4 oz. blue cheese, crumbled 8 oz. cream cheese, cut in cubes and at room temperature 1 tablespoon chopped fresh chives 1 tablespoon chopped fresh parsley 1 clove garlic, minced 1/3 cup white wine* 2 pounds shelled raw shrimp Cooked rice or pasta

Preparation

1. In a medium mixing bowl, combine the blue cheese, cream cheese, chives, parsley, garlic, and wine. Beat until smooth. 2. Fold in shrimp by hand. 3. Pour into a greased shallow 2-quart casserole dish. Place in roaster oven and bake 400°F for 20 minutes or until mixture is bubbly and shrimp are just done. Mixture will be soupy. Serve over hot rice or pasta.

Success Tip:



Substitution:

You may substitute 1/4 cup ginger ale + 1 tablespoon lemon juice for the wine.
